  • Chef Christian Graves sources ingredients from farms, ranches and fisheries guided by principles of sustainability and, whenever possible, from local growers and harvesters.

  • All beef is source-verified 100% Angus and tested to be BSE-free.

  • Our own rooftop garden supplies herbs and produce highlighted in Chef Graves' dishes.

  • When selecting seafood for the menu, Chef Graves adheres to the Monterey Bay Seafood Watch program standards.

  • Jsix recycles all glass, paper, cardboard and aluminum and does not use Styrofoam for any purpose.

  • Menus are printed on recycled paper with soy-based inks.

  • All of our excess cooking oils and grease are recycled into bio-diesel fuels.

  • The Jsix wine list includes superb organic and biodynamic wines.
